Broccoli Stem Hummus Total Time: 20 min Yield: 12-15 servings (serving size= 1/4 cup) Ingredients: 2 cups broccoli stems, peeled and chopped 1 garlic clove 1/4 cup tahini paste Juice of 1 lemon 3 tablespoons olive oil 1 cup fresh herbs including stems (e.g.: parsley, dill and chives), chopped 1/2 teaspoon kosher salt How to Make it: Bring pot of water to a boil Add broccoli stems and boil for 5 minutes, until fork tender Drain the broccoli stalks and place into an ice bath.
