Broccoli Stem Hummus

Total Time: 20 min     Yield: 12-15 servings (serving size= 1/4 cup)


  • 2 cups broccoli stems, peeled and chopped
  • 1 garlic clove
  • 1/4 cup tahini paste
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 cup fresh herbs including stems (e.g.: parsley, dill and chives), chopped
  • 1/2 teaspoon kosher salt


How to Make it:

  1. Bring pot of water to a boil
  2. Add broccoli stems and boil for 5 minutes, until fork tender
  3. Drain the broccoli stalks and place into an ice bath.
  4. Add the following to the food processor: broccoli stalks, herbs, garlic, tahini, lemon juice, olive oil, and salt
  5. Blend until smooth, while scraping down the sides as needed
  6. Serve with broccoli florets, or a vegetable of your choice
