Ingredients:
1 1/2 cups dry farro, cooked according to package instructions (makes 3 cups cooked farro)
4 cups shredded cabbage or cole slaw mix
2 cups thawed frozen edamame, run under warm water or thaw in refrigerator overnight
1/2 cup pumpkin seeds
1/2 cup soy ginger dressing
To make your own: whisk together 1/4 cup rice wine vinegar, 2 tablespoons lite soy sauce, 1 tablespoon sesame oil, 3 tablespoons olive oil, 1 teaspoon honey, 1/4 teaspoon each salt, pepper and garlic powder
How to make it:
For each individual salad, layer the following the ingredients in a Mason jar or bowl:
