Farro Edamame Salad

Ingredients:

  • 1 1/2 cups dry farro, cooked according to package instructions (makes 3 cups cooked farro) 
  • 4 cups shredded cabbage or cole slaw mix 
  • 2 cups thawed frozen edamame, run under warm water or thaw in refrigerator overnight 
  • 1/2 cup pumpkin seeds 
  • 1/2 cup soy ginger dressing 
    • To make your own: whisk together 1/4 cup rice wine vinegar, 2 tablespoons lite soy sauce, 1 tablespoon sesame oil, 3 tablespoons olive oil, 1 teaspoon honey, 1/4 teaspoon each salt, pepper and garlic powder 

 

How to make it:

  1. For each individual salad, layer the following the ingredients in a Mason jar or bowl:
    • 1 cup shredded cabbage
    • 3/4 cup cooked farro
    • 1/2 cup edamame
    • 2 tablespoons pumpkin seeds
    • 2 tablespoons salad dressing
